- 4 breakfast sausages, sliced (or plant-based sausage)
- 2 eggs
- 1 tbsp olive oil
- Salt & pepper to taste
- Instructions:
- Heat olive oil in a skillet over medium heat.
- Add diced potatoes and cook until golden brown.
- Add onions, bell peppers, and sausage. Cook for 5 minutes.

- Instructions:
